If you prefer salty and marinaded food this traditional Danish raw salad will strike your fancy!
Ingredients (2-3 serves):
- 3 medium beets
- small bunch parsley
- 1 lemon
- 1 teaspoon chopped garlic
- 1 tsp honey
- 3 tsp Dijon mustard (you can replace it with mustard seeds)
- 0,5 tsp olive oil
- pink salt (or dry sea cabbage)
- 1 bay leaf
- black peppercorns
- 150 g tofu cheese
Firstly, make pickle: mix chopped parsley, juice of one lemon, garlic and olive oil in a deep bowl or plastic container. Next add mustard blended with honey, 5-6 peppercorns, bay leaf and salt to taste.
Next cut raw peeled beets into thin pieces. Put it in a bowl and fill with water.
Then cover a bowl or plastic container and put in the fridge.
After 6 hours beet should be pickled and softer. Dish up beet with tofu cubes.
