Italian cuisine is my big love. And of course, pasta is too! So long as I was not vegan I could eat this dish every day and felt myself perfectly. Now I prefer gluten-free pasta or I “cook” raw vegan pasta.
Today I will tell you how to make linguine with tomato sauce. Real linguine is the type of pasta (similar to spaghetti), but it’s more flat and longer. Linguine is always served with stodgy sauce. I prepare pasta from zucchini noodles, and it looks like linguine, that’s why I took the liberty of taking such name for this recipe.

Ingredients for 3 servings:
- tomato – 230 g.
- zucchini – 2
- grapefruit – 1/2
- cauliflower – 140 g.
- avocado – 1
- a segment of one garlic
- salt, pepper, turmeric
To prepare pasta from zucchini, you will need a spiralizer – it is a grater for making noodles from different vegetables.
So, take your zucchini an peel it. Then cut off the top and back part of zucchini (it should looks like a square) and spiralize it.
Let’s make a sauce: blend tomato, avocado and garlic together, add juice of 1/2 grapefruit and some spices. Mix sauce with pasta.
Chop or grate a cauliflower. Serve it with your pasta.
Paste linguine is ready! This dish is low-calorie but very tasty.
